questions about the brewing wine?

scicence for my project at school we are having a little wine. we plan to measure the content alcochol, taste, and if we can, calories and sulphites. any idea how to do that? if this were your experimetn, w hat would you measure? thanks

You can make alcohol with a hydrometer. You density measured before and after the starter and you can do the math. That also let you know how much residual sugar you have. The sulfides are only added. So most home made wine does not have them. That's part of the draw. Calories run in a bomb calorimeter. That is actually quite difficult to implement, and could be dangerous if you do not know what you're doing. I did it first in my first year working a chemistry degree.
